I ate at Bouillon Chartier (I believe that was the name, the oldest Bouillon) about 40 years ago, enticed by the cheap prices and the classic selections. Afterwards, I decided not to give in again to my penury. However, last year, with the current mania for Bouillons, I decided to give it another whirl. I went to the Bouillon Republique. Again, only had to stand in line for 5 minutes at the opening. As I was much more Frenchified (is that a word?) than 40 years previously, I enjoyed observing the psychology and sociology of eating and working at a bouillon in Paris. I certainly admired the fortitude of the staff, Even if I did not admire the decision making of working at a Bouillon. If I remember correctly, I would say that the quality of the food was perhaps a bit higher than I remember, I would call it acceptable, but I would not really look forward to eating there again. Though my cheapskate side will work towards encouraging me I would suppose. 😉
